Celebrating Cinco de Mayo part 2 – AD sent for review

Following on from my recent post about Cinco de Mayo and the lovely Fajitas we made, we decided to extend our celebrations to use the remaining ingredients from our Discovery Foods parcel to make Cajun Chicken for our tea tonight, using the Cajun Cooking Sauce and what was left of the newly launched Garlic and Herb Sour Cream (it has to be said that Monkey is now addicted to this and wants it to dip with every snack and meal we have – suffice to say we did not have much left for our meal this evening!)

I cut 500g of chicken breasts into strips and put them into a bowl with the Cajun seasoning, added 2 tablespoons of olive oil and mixed thoroughly.  This was added to a heated pan and cooked until it was nicely browned and cooked through.  I then added the main sauce to the pan, bought to the boil and cooked for a further minute – and there you have it!  I served the Cajun Chicken with steamed brown rice and a side salad and topped it off with what was left of the Garlic and Herb Soured Cream.  It was delicious 🙂
