Fancy a quick & easy dinner from ilumi – also nut, gluten & milk free?  I’m very lucky that I can eat anything and suffer no ill effects.  Sadly I have a number of friends who suffer from coeliac disease and my oldest friends daughter has a number of food allergies.  So providing a meal for these friends can be a bit of a minefield for me – but when I was asked if I fancied trying some curry (who wouldn’t!) ilumi answered my prayers.

I received a pouch of ilumi Yellow Basmati Rice and their Aromatic Thai Red Chicken Curry. You can order a number of different curries, casseroles, soups, sauces and gravies to be delivered directly to your door along with either yellow basmati or white long grain rice.

They don’t need to be refrigerated – which intrigued me, especially with regards to the chicken curry.  ilumi have an interesting FAQ page that answered a lot of my questions.

So tonight I needed a quick and easy dinner for myself and Daddy P, I haven’t used a ready microwave meal in years, but the ilumi pouches seemed like a healthy, quick choice.  All of the ingredients are clearly shown on the front of the pouch (on the website you have the option to search on – ingredient to exclude or include – great for allergy sufferers)

I opened the top of the rice pouch and placed it in the microwave for 1 minute, while it was standing for 1 minute, I placed the unsealed curry pouch in the microwave for 2 minutes and left it to stand for a further 1 minute.  I repeated the process for Daddy P’s portion.

So what did we think?  The rice was lovely, well cooked and not at all dry.  The chicken was pink in the middle, I would have been worried about this, but I’d actually read through the FAQ section on the website earlier today and seen this every query answered!

The chicken was moist and the curry sauce was authentic and full of flavour.  For us, it could have done with a bit more chicken, but overall, we were both rather impressed.  We definitely enjoyed our curry and washed it down with a nice, cold beer!
