Simply Scrumptious CupcakesAnyone who follows me on Instagram will know that I’m often to be found in the kitchen baking cakes.  Sometimes by myself, sometimes with my egg beating assistant AKA Monkey, aged nearly 4!  So when Liz Berwick, the lady behind Simply Scrumptious Cupcakes asked me if I’d like to look at her soon to be launched recipe book – I said Yes Please!

The 33 page paperback book (a Kindle version will also be available – but you know me and technology!) covers tips, equipment and frosting ideas, along with 10 cupcake recipes with 10 additional variants.  All of the recipes in Simply Scrumptious Cupcakes are really very easy to follow and all have accompanying photographs.

I decided to try the Carrot and Walnut cupcakes (minus the walnuts – sorry Liz, friend with allergy alert).  My Monkey son, was eager to assist with egg beating as usual and watched my every move to ensure I made the cupcakes correctly.

What did we think – they were moist and truly scrumptious! I didn’t even get a chance to add some frosting before my two gannets had helped themselves.  Oh well, gives me an excuse to bake something else – maybe Black Bottom Cupcakes or Nanna Gore’s Sticky Gingerbread Cupcakes …..

The Simply Scrumptious Cupcakes recipe book would make a lovely stocking filler for any home baking fan.

I’m a first time, full time Mum in my 40′s. I had a busy life in Export Sales before my Monkey came along, but decided to become a stay at home Mum once he arrived. We’ve had a busy 3 years so far, but now as Monkey has started pre-school I’ve decided to start a blog about our journey and experiences from here on in. We also have a kitten called Brewster who will be making appearances and I’m a mad Ferrari F1 fan, so am sure that will slip in to the blog too.
