There are lots of recipes I want to try and I thought I’d share a couple with you, to give you a flavour of what 150 Fast & Simple Recipes offers. First up was Mozzarella-Stuffed Chicken Breasts.
The recipes are really clear and concise and use ingredients readily available at any supermarket. I prepared everything in advance and left covered in the fridge, then when it was dinner time, I added the chicken stock and tomatoes and cooked for 20 minutes in the oven.
The verdict? Three empty plates. Monkey wasn’t so keen on the cooked Parma Ham but he loved the stuffed chicken and the flavours worked really well. I’ll certainly be cooking this again.
Next up to try was the Mini Apple Crumbles.
Another super simple recipe to follow. I was interested to see how using porridge oats and light muscovado sugar would work as an alternative crumble base. Would the family approve?
The Mini Apple Crumbles take 15 minutes to prepare and about 18 minutes to cook. The individual ramekin sized puddings were perfect for Monkey and Daddy P and I enjoyed them too with a little vanilla ice cream. We all liked the alternative topping and I’ll definitely be making this pudding again in the future.
