BritMums teamed up with Discovery Foods to give us the opportunity to celebrate the festival of Cinco de Mayo in style.  This festival is held on 5th May in the USA and regions of Mexico to celebrate the pride of Mexican heritage.

We received a lovely package from Discovery Foods consisting of:
a Perfect Fajita Kit ( including 8 flour tortillas, fajita seasoning and salsa), Cajun Cooking Sauce and the newly launched Garlic and Herb Sour Cream – yum!

I love Mexican food and have given Monkey Fajita’s on a number of occasions, as it’s a very versatile, quick, dinner time meal.  So I decided that we would have these on Cinco de Mayo to start the celebrations.

I cut 500g of chicken breasts into strips, put 2 tablespoons of olive oil and the fajita seasoning in a bowl – added the chicken and mixed thoroughly.  This was added to a heated pan and cooked for 5 minutes.

If I was just cooking for myself and Daddy P, I would have added onion, peppers and mushrooms but my son prefers these raw so I left them out. Once the chicken was cooked I heated the tortillas for 8 seconds each in the microwave, spread a little of the salsa mix on top, before adding lots of salad items – lettuce, peppers, mushrooms, spring onions, cherry tomatoes, radish, celery and cucumber. This was topped off with the fajita spiced chicken strips and the new Garlic and Herb Soured Cream – very nice indeed.

I wrapped them up and we were ready to go.  Monkey decided that he wanted everything separate today – typical!  But he loved dipping all his salad bits and chicken in the Soured Cream so it’s a winner with him too. Empty plates and he said ‘that was lovely Mummy :)’

So what to do with the Cajun Cooking Sauce?  I can feel a Cajun chicken meal with rice and beans coming on – watch this space …..

    1. They were good. Still got to do something with the Cajun sauce, we’ve done fajitas lots of tim, but the garlic and herb soured cream is delicious and Monkey has had that lots since it’s arrived as a dip for his carrot stick etc – yummy
