unearthed – food from around the world

As you know I’m always on the look out for something new to try when it comes to food.  Also I want Monkey to explore new textures and tastes as the norm. unearthed are known for their quality foods and exciting flavours from around the world.

unearthed is launching forty-eight new and improved products to their range, available exclusively from Waitrose and includes such products as Chorizo and King Prawn Pinchos and Galician Mussels.

Sounds mouth-watering, and reminds me of the time we spend with family and friends in Spain.  unearthedI’d received some unearthed Smoked Cooking Chorizo and decided to make a Chicken, Bean and Chorizo stew based on a recipe I’d received recently.

Preheat over to 180 deg C

I used:
3 chicken breasts wrapped in parma ham
400g tin of Cannellini beans
olive oil for the pan
1 chopped onion
1 crushed garlic clove
2 tsp paprika
100g of unearthed smoked cooking chorizo, sliced
1 diced carrot
2 medium potatoes, diced
1 tbsp tomato puree
400g tin of chopped tomatoes
200ml chicken stock
Sprinkling of thyme and oregano

I seasoned the chicken, wrapped in parma ham and placed in a casserole dish.

Then added the onion to a heated pan and cooked for 5 minutes until softened.  Then added the garlic, chorizo and paprika and cooked for a couple of minutes.

Added the tomato puree, carrot and potatoes, stirred in and cooked for a couple of minutes.  Then added the chicken stock, cannellini beans, herbs and chopped tomatoes.  Once mixed through I poured this over the chicken and cooked in the oven for an hour and half.

This made enough stew for the three of us to eat over two evenings!  It was delicious, the chorizo was tender and full of flavour.  I think my parent’s neighbours would certainly approve!

I’m going to be adding the unearthed Quinoa Houmous with Black Olive Tapenade and Galician Mussels in Tomato Sauce to my Christmas feast shopping list – they sound devine!
