Pride of Oven Pride Blogger Challenge 2As you know I’m one of the Pride of Oven Pride Bloggers for 2014, and I’ve just been set a new challenge.  Challenge One saw me spruce up my kitchen and for the Pride of Oven Pride Blogger Challenge 2 I will be cooking with vegetables.  This challenge comes in two parts – one will feature here and one will be shown on the Oven Pride Blog soon.  Luckily we all love vegetables here, even a fussy eating 4 year old, will eat his greens!

So for the Pride of Oven Pride Blogger Challenge 2 I was provided with a lovely voucher to purchase lots of fab fresh vegetables.  I decided to make a Garlic Chicken casserole, which I’ll show here, and a Butternut Squash soup which will be shown on the Oven Pride Blog.

Pride of Oven Pride Blogger Challenge 2I’ve based my Chicken casserole on a recipe found in Love Food – Delicious Casseroles – a book I use a lot.

This recipe is meant to feed 4 people, the three of us ate one evening, and there were still 2 adult portions left for dinner the next night.

You will need:

4 tbsp oil – I used Olive Oil, but you could use Sunflower Oil
900g Chicken meat, chopped
250g Mushrooms, sliced.  I used Chestnut mushrooms
16 shallots
6 garlic cloves, crushed
1 tbsp plain flour
250ml dry white wine
250ml chicken stock
1 fresh bouquet garni with sage
1 celery stick (I chopped it up)
salt and pepper
400g Borlotti Beans, drained and rinsed.  I actually used Black Eyes Beans

Preheat your oven to 150 deg C/300 deg F/Gas Mark 2

Heat the oil in a large frying pan and fry chicken until golden.  Remove chicken from the pan and set aside.

Add mushrooms, shallots and garlic to the pan and cook for 4 minutes.  Return the chicken to the casserole and sprinkle with the flour.  Cook for a further 2 minutes.

Add the white wine and chicken stock, stir until boiling, then add the bouquet garni and celery stick.  You are meant to remove the celery at the end of cooking, but I chopped mine up to be a part of the casserole.  Season with salt (I don’t) and pepper to taste.  Add the Black Eyed Beans.

Transfer to an over proof casserole, cover and cook in the oven for 2 hours.  Remove the bouquet garni and serve with freshly steamed vegetables.

A lovely meal full of goodness, using lots of fresh vegetables and Monkey’s first time to try Romanesco Broccoli.  It went down well on a rather chilly March evening.  The fact that it then fed Daddy P and myself for another night, was an added bonus.

  1. That looks really good Mary. I love garlic and chicken together so I may have to try this one out. I can’t help wonder what Daddy P thought of you getting a veg delivery though!

  2. Looks great, I love the look of the Romanesco broccoli, we all love broccoli in this house, not sure I’d have the patience to peel and chop 16 shallots though!
