We’ve been set a challenge by Beanies – to make something with to celebrate Easter using their flavoured coffee. Roll up #BeaniesBakeOff
I received three different flavours of Beanies Instant Coffee – Mulled Spice, Caramel and French Vanilla. My decision was then, what to make? Well you all know how much my Monkey 4 year old son loves to help me bake. What shall we make Monkey? Chocolate cake Mummy!!! Ok, lets see what I can find.
I have a few Hummingbird Bakery cookbooks and found a recipe for a Chocolate and Coffee Loaf. That sounded right up our street.
I decided that we’d use the Beanies French Vanilla Instant Coffee in the cake. But we still needed something Eastery. Some frosting, sprinkles and mini eggs were called for. I thought I’d try something different and add a teaspoon of coffee to the milk when making my chocolate frosting. Ooh La! La! We gathered our ingredients and we were #BeaniesBakeOff!
The Chocolate and Coffee Loaf took an hour to cook in the oven, it was the first time we’d made it, would it be ok? The Chocolate and Coffee frosting came together well and tasted good!
Monkey was left in charge of decoration. He really enjoyed be a part of #BeaniesBakeOff. Monkey presents our Easter Chocolate and Coffee Loaf.
So what did it taste like? Well we were in for a treat! It smelt wonderful and it tasted delicious!! So moist, with a hint of vanilla.
It was the first time I’ve ever baked with coffee, it won’t be the last. I’m thinking of tweaking another Hummingbird Bakery recipe which uses Mincemeat to make muffins. Might just add some Beanies Mulled Spice Instant Coffee and see what happens. Not very Eastery so I’ve not included here, come back in December for that one!

I have never thought to bake with flavoured coffee – I’m not a massive coffee fan but Hubby loves it. I will be making him flavoured coffee cakes in the future! x
