What more could you ask for after a busy day at school than fajitas and a film?!  Thanks to the lovely team at Santa Maria, that exactly what Monkey and I have been doing.

We love Mexican food here, and I always find fajita’s are a great quick and easy meal to put together.  As we were off on our travels last weekend I needed a quick meal and thought fajita’s and a film would get us in the holiday mood.  We received lots of goodies from Santa Maria (Discovery Foods has been rebranded) along with a copy of one of my favourite childhood films – Willie Wonka and the Chocolate Factory.

Monkey likes fajitas, but with everything separate on his plate!  As he doesn’t like things too spicy I used the Santa Maria Medium Fajita seasoning mix.

Prepare the seasoning with olive oil, mix with chicken, cook through in a pan with peppers.  We always add mushrooms and onion too.  Pop the tortillas in the microwave for 45 seconds and serve with Guacamole, Salsa and Sour Cream – yum!  I like things spicy, so I always top my fajitas with jalopeños for an extra zing.

Whilst watching Charlie Bucket and his adventures in the Chocolate Factory with Grandpa, we also indulged ourselves with the new Sweet Chilli Nacho Rolls – crispy corn chips, along with some Onion and Garlic Dip.  Delicious.  The Nacho Rolls didn’t last long!  I’ll be adding more to our shopping basket this week!
