Preparing for Easter with the Happy Feaster Blog Tour

I’m preparing for Easter with the Happy Feaster Blog Tour which has been organised by Ladybird Books and The Happy Foodie.  We have been challenged to take storytelling from the page to the kitchen by creating a Spring recipe inspired by the Tales of Peter Rabbit.  I asked Monkey what he associated with Peter Rabbit and his instant response was Carrots!!  So we’ve decided to create some Carrot Cake slices.

Beatrix Potter and her wonderful stories were a key part of my childhood reading.  I adored all of the animals and their adventures.  Monkey loves them too and is a big fan of the television series.  Peter Rabbit is definitely his favourite character, and an obvious choice as our inspiration.  Both Peter and Monkey love carrots!

I based our Carrot Cake Slices on a recipe from one of my favourite baking books – The Big Book of Baking.

Here’s the full recipe for you, it’s super easy to make and they taste delicious!

Servings – 16 slices

prep time – 15 minutes
cook time – 40 minutes
passive time – 5 minutes

Ingredients

175ml sunflower oil (extra for greasing baking tin)
175g light muscavado sugar
3 eggs
175g grated carrots
85g sultanas
175g self raising flour
1 tsp bicarbonate of soda
1 tsp ground cinnamon
1/2 tsp grated nutmeg
16 carrot cake decorations – optional

for frosting
200g full fat soft cheese
100g icing sugar
2 tsp orange juice
1 tbsp olive oil

Preheat the oven to 180 deg C/350F/Gas mark 4
Grease and line the base of a 23 cm square baking tin
In a large bowl beat together the oil, muscovado sugar and eggs.  Stir in the grated carrots and sultanas.
Sift together the flour, bicarb of soda, cinnamon and nutmeg, then stir evenly into the carrot mixture.
Spoon the mixture into the prepared baking tin and bake in a preheated oven for 40-45 minutes , until well risen and firm to touch.
Remove the cake from the oven and set on a wire rack for 5 minutes. Turn out on a wire rack when completely cool.
For the frosting – combine the soft cheese, icing sugar and orange juice in a bowl and beat until smooth.
Spread over the top of the cake.  Decorate with chocolate carrots!.  When set, you can cut the carrot cake into squares or slices

  2. I love Peter Rabbit as it’s the first Beatrix Potter book I read and I loved it from the start, plus he looks so cute in his little blue jacket!

  3. Jeminima Puddleduck, I was obsessed with her when I was little and my son loves looking at pictures of her in my old Peter Rabbit books

  4. Tabitha Twitchit the cat is my favourite. Not only does she hold down a job as a shopkeeper she also deals cheerfully with her three naughty kittens.

  6. Mrs Tiggy-Winkle – memories of staying at my grandparents and reading the old and battered Beatrix Potters that my Dad and his brothers read when they were little.
