Baking by colour with English Heritage

We all love eating apples here, we have an apple tree but sadly this year’s fruit just didn’t grow at all, so not sure what went wrong.  I love baking, although I’m nowhere near GBBO standard, but it’s still something I enjoy.  I’ve been baking by colour with English Heritage as they have a great infographic showing how the shade of an apple affects the best way to cook it.  Something I’ve never thought about before.

It got me thinking about what I would like to bake with apples.  I love Apple Cake, but it’s not something I have made before.  English Heritage challenged me to bake with apples as part of their apple festival at Audley End, which is running from Sat 26th Sun 27th September.

So I asked Daddy P for some Gala Apples and found a recipe for an Apple Cake and it was ready, steady, bake!

The slices of apple run through the centre of this cake, which can be eaten hot or cold.  I’d planned to show you a far prettier picture of the finished cake, but I had a little disaster.  I was using a loose base cake tin, and as I tried to pull the sides of the tin down, the cake flipped and I’ll leave the rest to your imagination.  Mary Berry I am not.  But, total disaster was averted and the Apple Cake still tasted delicious, pretty or not!

Servings – 12 slices
Prep time – 10/15 minutes
Cook time 55 minutes

Ingredients – for the cake

150g butter
150g caster sugar
200g self raising flour
3 eggs
splash of milk if needed

– for the filling

800g Gala apples, peeled, cored and sliced
100ml water
2 tbsp granulated sugar
1tbsp olive oil


Preheat the oven to 180 deg c
Place the apples and other filling ingredients in a saucepan and cook gently for 15 minutes. Try to keep the slices in one piece.
Cream butter and sugar together and then gradually add the eggs and flour to the mix. Add splash of milk if too thick.
Spread half the cake mixture in the base, cover with apple filling and spread the rest of filling on top
Sprinkle with granulated sugar and bake for 55 minutes or until golden brown.  Serve hot or cold

If you are anywhere near to Audley End next weekend then it’s well worth a visit as there will be all sorts of fun activities and games for all the family to try, involving the humble apple.  You can see over 100 types of apples whilst you are there too.

Can you believe that apples can be traced back to prehistoric crab apples!
